SCHEZWAN FRIED RICE
Ingredients
- 20 Red chillies
- 2 tbsp finely chopped garlic
- 2 tsp finely chopped Ginger
- 2 tsp Soy Sauce
- 3 tbsp Vinegar
- 1 tbsp tomato Ketchup
- 3/4 thtbsp salt or adjust
- 4 Tbsp Sesame Oil/Other
- 1/4 tsp Pepper powder
- 1.5 cup Rice
- 1/4 cup chopped carrots
- 1/4 cup Peas
- 1/4 cup Carrots
- 1/4 cup Green onions
- 1/4 cup chopped Bel pepper
- 2 Eggs optionally
- Salt to taste
- 1/4 cup Schezwan sauce from above

Method
Step 1
Soak 20 Red chillies in hot water. Leave for 30 minutes.Thechillies will soften.
Step 2
Now grind chillies with enough water to a puree. You can use the soaked water for this.
Step 3
Chop Ginger,Garlic finely.
Step 4
Take 4 tbsp Oil in a pan. You can use sesame oil if you have. I have used vegetable oil.
Step 5
Add chopped ginger and garlic. Cook for few minutes. It removes raw smell.
Step 6
Add chilli puree. Boil it.
Step 7
Add salt,Ketchup, Pepper powder,Soy sauce and Vinegar to the puree. If you don’t have ketchup on hand add 2 tsp sugar.
Step 8
Cook till Sauce thickens
